Here’s a really quick, simple way to boost your vitamin A, C and B-6 as well as an option for a tasty snack or side dish.
I can’t take credit for this recipe. My friend Daniella makes this regularly at her home and I’ve picked it up from her.
It’s so easy!
Ingredients
- bunch of kale
- garlic (fresh or powdered: based on your preference and/or availability)
- salt
- olive oil
Method
Heat oil in frying pan.
Remove kale leaves from stems and roughly chop.
Add kale to pan. Sprinkle with salt and garlic (minced if fresh)
Optional: cover to create steam to wilt the kale
Toss to combine while kale wilts and shrivels.
Plate and eat.
Serving suggestion
Add a fried egg for a quick green protein lunch.
Serve on a packet potato.
Salad to roast dinner.
In a wrap.
All alone.
Enjoy
