Sautéed Kale Salad

Here’s a really quick, simple way to boost your vitamin A, C and B-6 as well as an option for a tasty snack or side dish.

I can’t take credit for this recipe. My friend Daniella makes this regularly at her home and I’ve picked it up from her.

It’s so easy!

Ingredients

- bunch of kale

- garlic (fresh or powdered: based on your preference and/or availability)

- salt

- olive oil


Method

  1. Heat oil in frying pan.

  2. Remove kale leaves from stems and roughly chop.

  3. Add kale to pan. Sprinkle with salt and garlic (minced if fresh)

  4. Optional: cover to create steam to wilt the kale

  5. Toss to combine while kale wilts and shrivels.

  6. Plate and eat.


Serving suggestion

Add a fried egg for a quick green protein lunch.

Serve on a packet potato.

Salad to roast dinner.

In a wrap.

All alone.
